* Noodles with Tofu *


16-oz tofu
2 tbsp soy sauce
2 tsp ginger-garlic paste
2 tbsp lemon juice
1/2 tsp grated lemon zest
2 tsp oil
1 onion, chopped
1 tsp garlic paste
1 lb mushrooms, sliced
1 tsp oregano
1 lb flat noodles
2 tbsp chopped parsley
1 tbsp chopped nuts
2 tbsp sour cream (optional)

Boil the noodles and drain.
Process the tofu with the sauce, ginger-garlic, lemon
juice and zest, in a blender, till smooth.
Heat the oil and saute the onion and garlic till
golden. Add the mushrooms and cook till softened.
Mix in the oregano. Add the noodles and heat through.
Garnish with parsley, nuts and cream and serve hot.
