* Soy-mince Lasagna *

Lasagna as required
1/3 lb flavoured soy mince
3 tbsp olive oil
1 onion, chopped
1 green pepper, chopped
4-5 garlic cloves, minced
1 bunch broccoli, chopped
8-oz can mushrooms
1/2 quart stewed tomatoes
16-oz can plain tomato sauce
Salt, pepper and dried herbs according to taste
1 tub cottage cheese
1 tub ricotta cheese
24-oz mozzarella cheese, grated
8-oz cheddar cheese, grated

Cook lasagne according to directions and drain.
Soak and drain the soy mince.
Heat the oil in a large saucepan. Saute the onion,
pepper and garlic for 5-6 minutes. Add the tomatoes
and sauce and bring to a boil.
Add the soy mince, broccoli, mushrooms, salt, pepper
and herbs. Simmer till of sauce consistency.
Remove from heat and mix in the cottage and ricotta
Put the lasagna in a 8x12-inch baking pan. Spread a
layer of sauce, then a layer mozzarella and cheddar
cheese. Repeat the layering twice.
Bake in a preheated oven at 350 degF for 45 minutes
to 1 hour. Serve with soup or salad.
