* Quick Nutritious Curry *

1 cup chopped vegetables, OR 1 cup soaked dals, OR
1 cup sprouted legumes, OR 1 cup soaked soya nuggets
2 tbsp oil, 2-4 red chillies, 1 green cardamon
1 finely chopped onion, 1/2 tsp garlic paste
2 pureed tomatoes, 2 tsp dhaniya-jeera powder
1/2 tsp haldi, 1/4 tsp dry ginger powder
1 tsp dried methi leaves, salt & pepper to taste
1 tbsp chopped coriander, 2 slit green chillies (optional)

Wash the methi leaves and keep aside for 15 minutes.
Heat the oil and add the chillies and cardamon. Fry for 2-3 minutes.
Add the onion and garlic and fry.
Add the tomato puree and spices and fry till the oil leaves the masala.
Add about 1 cup water and bring to a boil. Add the vegetables or dals or soya and salt.
Cover and simmer till almost done. Add the soaked methi and simmer for 3-4 minutes.
Garnish with coriander and green chillies and serve hot.
