1/4 kg tender karelas (bitter gourd)
2 tbsp oil
Pinch of hing
1/2 tsp zeera
2 green chillies, chopped
1 tsp ginger paste
1 onion, chopped fine
1/2 tsp haldi
3 tsp coriander powder
1 tsp zeera powder
1 tsp saunf powder
1/2 to 1 tsp red chilli powder
2 raw mangoes, grated
Salt to taste
Wash the karelas and slice thinly. Apply salt and keep aside for an hour or so.
Then drain the water to remove the bitterness. Heat oil in a saucepan, add the
hing, zeera, chillies and onion. Stir-fry till golden.
Add the karela and the masala powders. Stir well and cover and cook on low
flame for about 7-10 minutes. Add the grated mango and salt and stir well.
Cover and cook on low flame for 4-5 minutes. Remove, garnish with fried
onion rings and cucumber slices and and serve hot.
