* Vegetable Raita *

2 cups full-cream yogurt
1 cucumber, finely chopped
1 onion, finely chopped
1 carrot, grated
1/2 beetroot, grated
1/2 green chilli, finely chopped
1 tbsp chopped coriander
1 tomato, finely chopped
1/2 tsp roasted cumin powder
1/4 tsp chaat masala or amchur powder
1/4 tsp chilli powder
1/2 to 1 tsp sugar
Salt and pepper to taste
Pinch of dry ginger powder
Pomegranate grains (for garnish)

Mix all the ingredients together.
Sprinkle with pomegranate grains and serve chilled.
