* Baked Mushroom Rolls *

30 slices spongy whole-grain bread
3 tbsp butter
1/2 cup finely chopped onion
1/2 cup tomato puree
450 gms mushrooms, finely chopped
1/2 to 1 tsp chilli powder
1/2 tsp turmeric powder
1/2 tsp coriander powder
1/2 tsp chaat masala (optional)
1-2 tbsp fine bread crumbs
1 tbsp chopped coriander
Salt & pepper to taste
3 tbsp olive oil
1/4 cup grated cheese (optional)

Cut off the crusts of the bread slices. Flatten with a
rolling stick.
Heat the butter, and fry the onion till golden. Add the
tomato puree and fry for 3-4 minutes. Add the mushrooms,
masala powders and bread crumbs. Cook till the mixture
is fairly dry.
Add the coriander, salt and pepper, and cool slightly.
Put the filling on the bread slices and roll them from
one end to the other. Secure with a toothpick. Brush
with olive oil.
Bake in a pre-heated oven at 425 deg-F for 10 minutes.
Sprinkle with grated cheese (optional). Serve hot with
ketchup or chutney.
