6 - 8 eggs
2 - 3 tbsp olive oil
1 onion, finely chopped
4 - 5 cloves garlic, finely chopped
2 - 3 green chillies, finely chopped
6 - 8 florets broccoli, broken into small pieces
3 - 4 french beans, stringed and finely chopped
1 small zucchini, cut into thin roundels
6 - 8 mushrooms, cut into halves
100 gms paneer or tofu, cubed
Salt, pepper and garam masala to taste
Chopped coriander leaves for garnishing
Whisk the eggs and keep aside.
Heat the oil in a non-stick pan over medium heat.
Saute the onion, garlic and chillies, till the onion
turns pink. Add the french beans and mushrooms.
Saute for 3 minutes. Add the broccoli and zucchini.
Saute for 2 minutes.
Turn the heat to low. Add the paneer, salt, pepper
and garam masala. Mix gently.
Add the eggs. Cook over low heat, stirring
continuously, till the eggs are cooked through.
Remove to a serving plate. Garnish and serve
immediately with toast.
